I am using the server for file storage and running a couple Hyper-V machines, they are only taking up 8 gigs of the 64 gigs total. It's been a while since I've troubleshot a Windows Server for this sort of behavior so I am hoping someone can help me identify what service is actually causing this problem, what logs should I turn on and look for, etc. Now it's back to normal but I don't know for how long. What I was able to do is disable defender real-time scanning (thinking that could be affecting it) and rebooted the server. I also see HDD activity lights on all my hard drives like its doing some sort of scanning.
I was able to remote in this morning and notice that the 'secure system' process is using up all 64 gigs of memory, so it makes sense that things are slow. Even at the console, explorer just doesn't do anything. I am currently running a Server 2019 bare metal server and I've noticed in the past few days that when I try to RDP into it, it's basically non-responsive.
